Caveman Gluten Free Banana Pancakes
No doubt that these are not something new. In fact I dare guess that I have ripped someone else off and for that I blame my sister. It is all her fault she stole it from the originator. No really she did. Anyway she did actually say that it was from a "friend" and that it was "AMAZING". She is also quite possibly the biggest exaggerator I know and the biggest over user of the word amazing. Anyway back to my story and the recipe. After y sister made these for me I thought that they were alright so i played around with the recipe a bit. This is what I have got for your taste buds. It is really easy and we quite often have it for breakfast at the last minute if we have some nice ripe bananas on hand. The Caveboy loves them and generally steals them off of the Cavewife's plate.
Gluten Free Banana Pancakes
Will make roughly 6-8 regular sized pancakes, double, triple or quadruple if you so wish
2 Eggs (medium to large size)
1/4 Cup of Almond Meal (or any nut meal. Friend of the Caveman, Shelly, recently mentioned she uses rice flour)
1 tsp Cinnamon
1 tsp Vanilla Extract/Maple Syrup/Raw Honey (pick your poison)
1 tsp Coconut Oil
1. Place a frying pan on a medium heat.
2. Place the cinnamon and the banana into a bowl. Mash the hell out of your banana. If you want lumps don't mash all the hell out of it, just some. If you like it smooth continue mashing.
3. Whip up those eggs and once fluffy add to the bananas and mix well.
4. Add all the remaining ingredients except for the coconut oil, yep don't get ahead of me. Add the coconut oil to the pan.
5. Your pan should be well and truly hot enough by know so add your first spoonful of mixture. My preference is to make three at a time which are the perfect size for my son. If you overfill the pan you will not be able to flip these suckers.
6. Unlike normal pancakes these will not start to have bubbles form on the top. Have a sneaky look on the underside. if it is a light caramel brown, get that spatula or egg slide under and flip them over.
7. Once the other side is suitably browned and cooked though remove from the heat and place on the serving plate. Adorn with whatever takes your fancy. I am a sucker for berries, macadamias, walnuts, dates and coconut cream that has been in the fridge overnight (do it if you haven't tried it before)
If you are making multiple batches you will likely have to regrease the pan. Enjoy this very simple and tasty recipe.
